Chef Francesco is not only a master of his craft but also a fantastic teacher who made the session incredibly fun. We got our hands floury making two distinct styles:
- Tagliatelle with Beef Ragu: The long, flat ribbons had the perfect al dente "bite." When tossed in a rich, slow-cooked beef ragu, every strand captured the savory sauce perfectly.

You cannot visit La Dotta without trying their legendary Rigatoni Carbonara. This dish is a masterclass in balance. The large rigatoni tubes are perfectly coated in a velvety sauce made from Sean’s Egg premium yolks and imported Pecorino Romano cheese.
