Scalini at the Hilton Sukhumvit Bangkok's new "I Believe I Can Fly" Menu Is Uplifting!
The thaifoodies team joined a select group of press and food bloggers for Media Night at the Scalini Restaurant in The Hilton Sukhumvit Bangkok at Sukhumvit soi 24 for the launch of Chef Supoj Suwanwong 's new "I Believe I Can Fly" menu featuring a selection of Italian-inspired poultry dishes. His inspiration is from his favorite singer R. Kelly who performs the iconic "I Believe I Can Fly."

Chef Supoj uses only carefully selected free range poultry free of hormones and steroids to create his enticing selection of menu choices served with local organic vegetables.
Guests may detect the subtle use of black truffles – one of Chef Supoj’s magical additions to ensure unrivalled flavor.
He recommends the oven-roasted whole free range chicken, suitable for two persons, and priced at THB 1,995++. Main course menu prices start at THB 750++.
Guests can also enjoy Scalini’s informal, yet stylish ambience and savor the Italian influences and flavors in Chef Supoj’s new menu from April 3 to May 31, 2017 from 6 p.m. to 10.30 p.m. Reservations are recommended.

If you have yet to visit Scalini you should make the effort as it is a special place. The design is modern and elegant with an enormous open kitchen where you can view your scrumptious meal being prepared with an extensive selection of fine wines that line the walls. The dining area is intimate with subdued lighting that makes for a perfect romantic meal with your special someone. We really like the Vespa too!
In his new menu Chef Supoj has created a wonderful harmony embracing both a new take and a traditional approach to poultry that is exciting and immensely satisfying.
Our evening started with a taste of bubbly and samples of Organic Pyrenees Quail prepared tempura style with baby spinach and blueberry sauce and grain mustard. We also sampled an absolutely divine Risotto Acquerello mantecota with reggiano parmesan 36 months aged Rougle foie gras with porcini mushrooms and Barolo wine reduction. Amazing flavor!
Next up we were treated to a Homemade Pappardelle pasta with confit Margret duck sauce, asparagus, and fava beans. Perfectly balanced this dish brings to mind a lovely summer day with its light garden flavors.
Roasted organic Bresse pigeon sauteed with vegetables, white truffles scented creamy polenta and Porto wine sauce. Again here the balance is right on with the tender pigeon accenting the fresh veggies all underscored with the aroma of truffles and slight sweetness of the Porto sauce. Fantastic!
The meal moved into a more traditional yet still inspired phase with the introduction of a whole organic, grain-fed chicken stuffed with black truffles and potatoes served with fresh spring baby vegetables and barbaresco wine jus. Reminiscent of a home cooked meal yet taken to a new level with the introduction of black truffles and spring veggies - the wine jus was remarkable finishing the flavor medley of this masterpiece perfectly.
Dessert was a very light and delicate Green Tea Tiramisu that rounded out the meal with a flair of sophistication.
