No matter how many times I visit Chiang Mai, it never gets boring. But this trip is extra special because we got to check in at a brand-new hotel that has everything you could ask for: beautiful design, ultimate comfort, great service, and an amazing view of Doi Suthep right from the room!

There were 4 of us on this trip, and we stayed in the Deluxe Executive Double room. I have to say, the room is incredibly spacious! There was plenty of space for the four of us to stay comfortably without feeling crowded at all. The interior has a modern, minimalist look that feels super clean and stylish. As soon as you walk in, you’re welcomed by a cozy living area with a sofa and a Smart TV, perfect for a Netflix or YouTube marathon.

The set included watermelon with sweet dried fish dip, shrimp toast, rose cheesecake, cured salmon (gravlax) bread, macarons, scones, traditional Thai shortbread cookies (Kleep Lamduan), ham and cheese sandwiches, and a spicy Thai herbal tofu salad.

 
 
 

Dinner Time | Blossom Bistro (Lobby Floor) For our first dinner, we ate at the hotel's restaurant. The portions were huge, and the flavors were authentic, rich, and truly impressive!

 
  • Crab Omelet: Thick, fluffy, crispy on the outside, and packed with crab meat.
 
 
  • Steamed Herbal Chicken (Half): The meat was tender and aromatic, fully packed with herbs like lemongrass, kaffir lime leaves, coriander roots, and pepper.
 
 
  • Other Highlights: Savory sweet pork belly stew (Moo Palo), authentic shrimp paste chili dip (Nam Prik Kapi) served with fried mackerel and fresh veggies, and a rich Tom Yum Goong with 4 giant shrimps! We finished the meal with sweet and chewy mango sticky rice.
 
 
 

🍳 A Generous Breakfast Buffet to Start the Day

 

After a very comfortable night's sleep, we woke up to a fantastic breakfast spread that was absolutely satisfying and full of variety:

 
  • Northern Thai Delights: They serve delicious Nam Prik Ong (Northern Thai pork chili dip) accompanied by crispy pork cracklings (Kaep Moo) and boiled vegetables.
 
 
  • Full Thai Menu: A great selection of diverse Thai side dishes and hot meals.
 
 
 
  • Western & Healthy Options: Fresh salad bars, fruits, assorted bread, tea, coffee, and fruit juices to complete your morning.
 
 
 

🥂 Nightlife: Chilling Out with Good Vibes at ‘Norm. Cnx’

 

When night fell, we went out to hang out at Norm. Cnx, a bar and bistro with the coolest vibe! The place is decorated in vibrant fuchsia pink, making every single corner perfect for Instagram photos. They have great live music and DJs that keep the energy up, and the staff are incredibly friendly.

Most importantly, the food was amazing! We ordered some wine to sip alongside delicious dishes like:

 
  • Stir-fried holy basil with minced beef (perfectly dry and full of wok-aroma)
 
 
  • Stir-fried rice vermicelli with water mimosa and fresh shrimp
 
 
  • Fried chicken wings coated in a rich, savory sauce
 
 
  • Spicy Tom Yum fried rice
 
 
  • Sun-dried pork (Moo Lob Daet) seasoned with lemongrass and kaffir lime leaves, which paired beautifully with cold drinks.
 
 
  • Fried shrimp with chili and garlic topped with heaps of crispy garlic.
 
 

After a few great cocktails, we called a Grab back to the hotel. If you’re looking for a place to hang out in Chiang Mai, I highly recommend this spot!
